One fateful day I was trying to photograph a cheesecake recipe. Long story short, I mistakenly mixed in a lot of extra sugar to the point it was unusable. And so became, this frozen cheesecake bites recipe!
Ingredient Notes
- Graham crackers: I wrote this recipe with the classic honey flavor for the traditional cheesecake taste. Feel free to choose your favorite flavor.
- Sugar: If you aren’t a major sweet tooth you can reduce the amount, start with half and mix in more to taste.
- Butter: This cheesecake bite recipe was written with salted butter, because I love it. If you’re not a salt fan use unsalted instead.
- Sea salt
- Cream cheese: Allow the cream cheese to soften so that it mixes smoothly.
- Heavy cream: This is what I had at the time and love the richness. Any milk will work, the purpose is to thin out the cream cheese enough to be soft and workable.
How to Make Cheesecake Bites
Because we don’t always have the time and patience to create masterpieces, we need simple dessert recipes to satisfy cravings. This is where these easy no bake cheesecake bites come in handy.
- Make the Graham cracker cheesecake crust crumbs:
- Crumble the Graham crackers in a food processor until they create fine crumbs.
- No food processor? Seal the crackers in a ziptop bag and use the flat side of a meat tenderizer or your hands to (gently) smash them into crumbs.
- Mix in the sugar, salt, and melted better until combined.
- Transfer to a wide, shallow bowl or dish and set aside.
- Crumble the Graham crackers in a food processor until they create fine crumbs.
- Mix the ‘cheesecake’:
- Use a hand mixer or food processor to whip the softened cream cheese and heavy cream until smooth.
- Use a spatula to fold in 1 cup of the Graham cracker mixture.
- Coat the cheesecake balls:
- Drop tablespoons of the cream cheese batter into the remaining Graham cracker mixture a few at a time.
- You don’t want to overcrowd your dish, leave room around each piece of the cheesecake mix.
- Roll the cream cheese into balls while coating them with the remaining Graham cracker crumb mix.
- Use your hands to scoop up a handful of crumbs along with a spoonful of the cheese mixture.
- Drop tablespoons of the cream cheese batter into the remaining Graham cracker mixture a few at a time.
- Chill:
- Once all cheesecake bites are coated and rolled place on a plate.
- Let them set in the freezer for at least 1 hour.








How to Store Frozen Cheesecake Bites
These make an excellent make ahead dessert! Have them prepped in advance for entertaining, or keep them in an easily resealable container for individual sweet treats whenever!
- After the initial 1 hour chill time, transfer the cheesecake bites to a freezer-safe airtight container.
- Freeze for up to 3 months.


Frozen Cheesecake Bites
Ingredients
- 8 Graham crackers
- 1/2 Cup Sugar
- 4 Tablespoons Butter melted
- 1 teaspoon Sea salt
- 8 ounces Cream cheese softened
- 4 Tablespoons Heavy cream
Instructions
Make the Graham cracker crust crumbs
- Crumble the Graham crackers in a food processor until they create fine crumbs.
- Mix in the sugar, salt, and melted better until combined. Transfer to a wide, shallow bowl or dish and set aside.
Mix the filling
- Whip together the softened cream cheese and heavy cream until smooth.
- Use a spatula to fold in 1 cup of the Graham cracker mixture.
Coat the cheesecake balls
- Drop tablespoons of the cream cheese batter into the remaining Graham cracker mixture a few at a time.
- Use your hands to scoop up a handful of crumbs along with a spoonful of the cheese mixture and form into a ball, then set on a plate.
Chill
- Once all cheesecake bites are coated and rolled let them chill in the freezer for at least 1 hour.
