Baked Brie With Mushrooms and Lemon Curd

Lemons, mushrooms, and brie? I know, the flavor combination might seem weird, but just trust me. The same thought crossed my mind when we first saw it on the menu at a local (now closed, sad face) restaurant, but I have a hard time turning down any flavor of baked brie.

I fell in love with the mix of rich, buttery mushrooms, sweet yet tart lemon curd, ooey gooey melted brie, and the flaky yet doughy puff pastry, it was perfection! The next time we went back, the menu item had evolved into something completely different which wasn’t nearly as tasty, so I set out to create my own version of the original.

Ingredient Notes

  • Brie: This recipe works best with a wheel of brie, most at your local store will likely be approximately 8 ounces. If you can only find a wedge, cut the triangle in half, flip one side around, and push them together to create a square or rectangle.
  • Puff pastry: You can find puff pastry in the frozen aisle of most grocery stores.
  • Lemon Curd: I’m partial to this Limoncello Lemon Curd recipe, but feel free to use your favorite.
  • Mushrooms: Baby Bella mushrooms have excellent flavor and texture, but any variety may be used. Slice them as evenly as you can so they cook evenly.
  • Butter: Salted butter was used when writing this recipe. If you use unsalted butter you may want to sprinkle some salt on the mushrooms as they sauté.
  • Fresh thyme: This is optional for a garnish but really adds nice flavor so use it if you can!

How to Make Brie in Puff Pastry

  1. Use a sharp knife to slice the top of the rind off of the brie, leaving the bottom and sides intact.
  2. Spread out a sheet of defrosted puff pastry on parchment paper and place the brie in the center with the cut side up.
  3. Pour half of the lemon curd on top of the brie.
  4. Fold the top and bottom of the sheet of puff pastry over the brie.
  5. Then fold in the sides leaving a little bit open in the center.
    • Seal the folds of puff pastry together with a brush of water.
  6. Bake in a preheated 350°F oven for 45 minutes, or until browned.
  7. While the brie is baking, add the thinly sliced mushrooms to a preheated skillet along with the butter.
  8. Sauté over medium heat for 5 minutes, then reduce the heat to low and cook until the mushrooms are lightly browned.
  9. Once the puff pastry is done and the brie is melty, carefully transfer to a serving plate, top with the sautéed mushrooms and remaining lemon curd, and enjoy!

What to Serve With Baked Brie

This puff pastry baked brie recipe can be served all on its own cut into wedges, but it’s also great served with dippers like:

  • Baguette slices
  • Crackers – the sturdier the better.
  • Apple slices – green apples are excellent for a tart taste, but any variety would be good.
  • Or include in a charcuterie board!

Ingredients
  

  • 1 Wheel of brie (approx 8 oz)
  • 1 sheet Puff pastry
  • 1/2 Cup Lemon Curd
  • 1 Cup Sliced mushrooms
  • 2 Tablespoons Butter
  • Fresh thyme optional for garnish

Instructions
 

  • Preheat the oven to 350°F, and preheat a skillet on the stove over medium heat.
  • Thinly slice the mushrooms.
  • Sauté sliced mushrooms in a pan with 2 tablespoons of butter over medium heat for 5 minutes.
  • Reduce the heat to low and cook until reduced and lightly browned, about 10 minutes.
  • Slice the top of the rind off of the brie, leaving the bottom and sides intact.
  • Spread out a sheet of defrosted puff pastry and place the brie in the center with the cut side up.
  • Pour half of the lemon curd on top of the brie.
  • Fold the top and bottom of the sheet of puff pastry over the brie.
  • Then fold in the sides leaving a little bit open in the center.
  • Seal the folds of puff pastry together with a brush of water.
  • Bake in a preheated 350°F oven for 45 minutes, or until browned.
  • Carefully transfer to the serving plate, top with the sautéed mushrooms and remaining lemon curd and enjoy!
